I’ve been dying to try mashed potatoes in the Instant Pot.  I have made homemade mashed potatoes for years but usually at Thanksgiving or a special occasion because it annoys me.  Otherwise, we use instant potatoes (so bad for you!) but hardly ever have them.  My problem with homemade mashed potatoes is that they will get too starchy or they will be lumpy and like concrete.  I get frustrated and give up.  They always taste good, I just don’t like the texture.  I think it is because of the boiling process.  They are either inconsistently cooked or are cooked too long.

Instant Pot Homemade Mashed Potatoes

  • 6 or 7 potatoes.  This time, I used russet but I really love making mashed potatoes with red potatoes, but we will save that for another day.
  • Butter to taste
  • Salt and pepper to taste
  • Milk
  • 1 cup water (for bottom of Instant Pot)

I’m keeping it simple.  You can add cream cheese, cheddar cheese, garlic, whatever you like. I did not give quantities of butter, salt, pepper, and milk because it will vary according to consistency and taste.  For this, I put about 1/2 cup milk in with 1/2 stick of butter.

I placed the trivet (comes with the Instant Pot) in the bottom of my 8 quart Instant Pot and then placed the steamer basket on top.   I quickly cut the potatoes into chunks and placed inside, making sure that they did not go above the 2/3 line.  Don’t forget – you need one cup of liquid so one cup of water poured in will be fine.  I set the time for 7 minutes and then did a 10 minute natural pressure release.pressure cooker mashed potatoes

Do you see these potatoes?  They are done.  I can’t begin to tell you how amazing the feel.  They are not overcooked or undercooked.  They are not mushy or starchy.  THIS IS WHY YOU NEED AN INSTANT POT!

instant pot mashed potatoesI use my hand mixer for potatoes.  Add milk, butter, salt pepper and in a few seconds, they were done.  Again, not starchy and not concrete!  No lumps!  I’m seriously blown away by this.  Looks like we are going to totally give up the instant potatoes and only do real potatoes from now on!

 

Instant Pot Pork Chops

  • Thin cut boneless pork chops
  • Famous Dave’s Rib Rub
  • 1 cup chicken broth (you can also use beef)
  • Dried parsley

instant pot pork chopsI really didn’t plan out my pork chops so I scanned the spice cabinet but didn’t feel like getting some seasonings together that made sense and worry about the amounts…. I found Famous Dave’s Rib Rub.  Obviously, a Dean purchase.

Hmmm… oh… look at that.  It says “Award Winning” and “I use it on everything” and “Great on pork chops!”  Whoah… you read my mind!   I guess we will use that.  I also dumped some dried parsley on top.  Why?  I thought it needed some green.  I’d like to say that my magnificent cooking abilities told me to do this.  No, I just thought it would look pretty.

Here’s the thing – whether you follow a recipe or use your own, all you need to know is how long in the Instant Pot?.  I used the rest of what was there, rubbed it on both sides of the pork chops, put them in the Instant Pot and set them for 5 minutes.  You read that right – 5 minutes!  with a 5 minute natural pressure release.

instant pot gravyWait, what about sauteing?  If you want to saute your pork chops after seasoning them, go right ahead.  Set the Instant pot to saute and brown both sides of each of the pork chops.  I used two packs of small very thinly cut pork chops here and I didn’t feel like sauteing 16 pork chops individually (or two at a time since I’m using the 6 quart – I don’t have time for that – and my 8 quart is tied up with the potatoes at the moment).


Instant Pot Homemade Gravy

  • 1 tablespoon corn starch
  • 1 tablespoon water
  • whatever is in the bottom of the pot while the pork chops are still in the pot

What is gravy?  Gravy is the leftover juice of the meat and whatever seasonings happen to be on the meat.  In this case, we also had chicken broth in with the pork chops so that automatically becomes part of our gravy.

Mix corn starch and water, pour into the Instant Pot while the pork chops are still in there.  Stir it in and press saute.  When it boils (which only takes a couple seconds if you do this as soon as you are done the pressure release), turn off and your gravy should be nice and thick.  If it is not thick enough, do another cornstarch/water and bring to boil.  This gravy was really good and full of flavor.  Probably because everything that comes out of the Instant Pot is full of flavor!
